Roasted Butternut & Warm Lentil Bowl

Last night I did not feel like making dinner. I had a mild headache and felt tired, but I still wanted a deeply nourishing, healthy meal. It needed to be effortless, quick, and easy.

This one was inspired by Woolies' Butternut & Beetroot salad, but I'd say slightly more elevated and packed with goodness (and you get more than five pieces of rocket, if you know, you know).

This was so easy, and wow, the tastes were exceptional, and it felt hearty and nourishing AF.

You can buy your butternut already diced to make it even easier, and use a tin of lentils to cut the effort further. But in all honesty, it was super quick to freshly prepare my own lentils. While they were cooking, the butternut was caramelising away in the oven.

1Ingredients

Roasted butternut

  • 1 medium butternut, peeled and cubed (~600g)
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme or rosemary

Warm lentils

  • 1 x 400g tin lentils (or 2 cups cooked lentils)
  • 1 heaped spoonful tomato pasta sauce
  • Black pepper, to taste
  • 1 tsp Italian herbs

Salad

  • 2 large handfuls rocket
  • 50g feta, crumbled
  • 2 tbsp toasted pumpkin or sunflower seeds (if you have them: soaking and roasting your own is easy and worth it, see how, why, and for how long)

Balsamic dressing

  • 3 tbsp olive oil
  • 1½ tbsp balsamic vinegar
  • 1 tsp maple syrup or honey
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Great add-ons

  • Hemp seeds
  • A squirt of lemon juice
  • Flax seed
  • Nutritional yeast
  • Toasted pecans or walnuts (3–5 min in a dry pan, makes this taste like something you'd order at a café)

2Method

Roast the butternut

Toss the cubes with olive oil, salt, pepper, smoked paprika, garlic powder, and thyme or rosemary. Roast at 200°C for 30–40 minutes, turning once, until caramelised at the edges.

Warm / cook the lentils

While the butternut roasts, warm the lentils in a small pot with the tomato sauce, black pepper, and Italian herbs.

Make the dressing

Whisk together the olive oil, balsamic vinegar, maple syrup or honey, Dijon, salt, and pepper. Or do it properly: grab one of the many glass jars collecting beneath the kitchen sink, tip everything in, lid on, and shake it up.

Toss the salad

Mix the roasted butternut with the feta, rocket, and toasted seeds, then add the dressing and toss to coat.

Assemble

Spoon the warm lentils into the base of your bowl, then spoon the dressed butternut salad on top. The warm butternut softens the rocket slightly, the feta goes creamy, and the balsamic ties it all together.

3Ayurvedic Adjustments

This bowl is naturally well-balanced: warm cooked elements, raw greens, healthy fats, and, notably, all six ayurvedic tastes in one dish (sweet, sour, salty, bitter, pungent and astringent). Vata · dry, cold, irritable when out of balance

Warm, moist & grounding

Already suits Vata well. Swap olive oil for ghee when roasting, add a pinch of cumin or fresh ginger to the lentils, and lightly wilt the rocket in the warm lentils rather than serving it raw and cold. Keep the balsamic dressing, finish with a fresh drizzle of lemon juice, and go a little heavier on the seeds for extra oiliness.

Pitta · fiery, sharp, intense when out of balance

Cooling & easeful

Balsamic is milder than most vinegars and carries natural sweetness, so keep it as is. Ease off or skip the smoked paprika, black pepper and garlic powder, the real heating culprits. Add cooling mint or coriander, keep the rocket, lean toward maple syrup over honey, and go lighter on the feta.

Kapha · heavy, slow, cold when out of balance

Light, dry & spiced

Cut the oil in both the roasting and the dressing by about half, and skip the feta or use a very light sprinkle. Lean into the lentils, light and astringent. Turn up the pungent heat: extra black pepper, a pinch of chilli, or ground mustard seed. Use raw honey instead of maple syrup, go heavier on the rocket, and keep seeds and nuts to a small portion.
